Firstly, you would want a bread maker that features your preferred design of its display and controls.

If removing the blade is not easy, there is a possibility that the finished bread will be damaged. While some people do not mind – so long as the bread tastes fine, others prefer undamaged bread.
Then, there is the need for the baking pan to be easily removable, as well. You should not have a hard time removing a bread maker’s baking pan because you will need to do such task regularly. After all, removing the baking pan so you can clean it is practically the only maintenance procedure for a bread maker to remain in condition.
5 – A Gluten-Free Setup
Lastly, if you are allergic to gluten, buy a bread maker that comes with a gluten-free setup. Choose one with two paddles and one (at least) custom cycle. This will address the unique properties of gluten-free dough (e.g. need only one rise, need a lot of kneading and mixing).
